JCC Healthy Living-Cooking with Rachael (AP)

The Cooking with Rachael class series is designed to help you get started in the kitchen making delicious plant-based foods, or to simply inspire you. Each class will build on the previous class, though you can also just take one or two if you prefer. All three classes will have a hands-on component, involving some knife work, and all three will result in some yummy take-home foods! Restriction: Ages 14 and older for all classes

1) Cooking with Rachael to Prep Like a Pro: “Mise en Place”, Knife Skills and Setting Yourself Up For Success: 10/30
In this class Rachael will guide you through some basic knife and prep skills and setting up your kitchen’s “mise en place” for cooking success. We will practice slicing, dicing and chopping a variety of vegetables with the goal of making a delicious vegetable soup for you to take home (2 servings). We will also discuss some time-saving tips for cooking throughout the week by preparing everything in advance. Please bring a cutting board and sharp knives (a small paring knife and larger chef’s knife or santoku knife for chopping).

2) Cooking with Rachael to Season Like a Star: Sauces, Dressings and Spices: 11/6
In this class Rachael will walk you through some simple strategies for taking your healthy food’s flavor from zero to hero. With some simple recipes as starting points, we will discuss how you can add flavor before, during, and after cooking for new levels of deliciousness. You will go home with a vinaigrette, a sauce, and a seasoning mix to enjoy at home. Please bring a cutting board and sharp knife (a small paring knife and larger chef’s knife or santoku knife for chopping) for chopping veggies. 

3) Cooking with Rachael, the Plant Protein Power Couple: Grains and Beans: 11/13
In this class Rachael will go through the basics of soaking and cooking grains and beans, the building blocks of a healthy, plant-based diet. Beans and grains, mixed together, create a more complete protein base for your meals. You will leave with a bean and grain dish to take home and enjoy (2 servings). Please bring a cutting board and sharp knife (a small paring knife and larger chef’s knife or santoku knife for chopping) for chopping veggies.

About the instructor: Rachael is a health coach, healthy cooking teacher, and vegetable cheerleader, known for making plant-based foods delicious and approachable to incorporate into anyone’s diet. Her company Delifefull also now makes grown-ola (yummy granola that makes grownup you feel responsible while making your inner kid happy too). Whether you are dealing with a new set of dietary restrictions, trying to lose weight, or just generally want to feel more vibrant and less stressed about food, Rachael would love to help you live life delightfully well fed!
